Analyses of Water-Soluble Vitamin (B1, B2, B3, and B7) Contents in Meat, Cereal, and Noodle Products Consumed in Korea

Abstract

|
In this study, we investigated the water-soluble vitamins (B1, B2, B3, and B7) found in meat, cerealand noodle products consumed in Korea. In case of meat products, the contents of B1 ranged from 0.039 to 0.295 mg/100 g, while that of B2 ranged from 0.029 to 0.327 mg/100 g. In addition, B3 ranged from 0.158 to 3.183 mg/100 g andB7 ranged from 0.812 to 2.588 ¥ìg/100 g. In case of cereal products, the contents of B1 ranged from 0.069 to 0.097 mg/100 g, and B2 ranged from 0.008 to 0.100 mg/100 g. Also in cereals, B3 ranged from 0.092 to 0.709 mg/100 g and B7ranged from 0.814 to 8.918 ¥ìg/100 g. In case of noodle products, the contents of B1 ranged from 0.057 to 0.128 mg/100 g and B2 ranged from 0.008 to 0.048 mg/100 g. B3 ranged from 0.022 to 6.537 mg/100 g, and B7 ranged from0.474 to 3.067 ¥ìg/100 g. The data from this study on soluble vitamins found in meat, grain, and noodle products canbe used as a basic nutritional database.
